On November 19, the Carmen Sallés School in Jiutepec, Mexico, held the “MILPA FAIR”, a project by the fifth and sixth grade students in which they presented the properties of the Milpa or elote, corn, or choclo as it is also known. We learned about its benefits, the vitamins it contains and the varieties of dishes that can be prepared with it. Some of these dishes are: Uchepos, tamales, corn bread, flan, pie, corn torilla soup, stuffed zucchini, cuitlacoche cream, quesadillas with pumpkin flower, huitlacoche flautas, milpa-style chilaquiles, enchiladas, among other delicacies. A very tasty and useful fair!
